Timber, glass and deep pine silence — with a spa under the trees and some of Germany's most serious mountain cooking.

A low-slung lodge that all but disappears into the spruce, built for people who want quiet, woodsmoke and a genuinely great dinner. The kind of place where you arrive wired and leave on forest time.

The last stretch is a single-track road that climbs through the pines above Baiersbronn, and then the lodge appears low and long against the slope, more timber and glass than building. Inside, it is all warm larch, a double-height fireplace already lit, and a wall of windows that turns the forest into the only thing worth looking at. You are handed a glass of cold local Riesling and walked to your room, and the silence is the first thing you actually notice — thick, total, almost a sound in itself. The mountains do the rest.

The room

Ours was a corner suite clad in pale larch, with a bed facing the glass and a private balcony cantilevered out into the canopy, close enough to hear the trees move. The detailing is quietly precise — loden-grey wool, a hand-thrown ceramic basin, underfloor heating against the mountain cool, a wood-burner stocked with split beech. There is a deep stone bath set by the window, a rainfall shower big enough for two, and Black Forest botanical toiletries that smell of pine resin and fir. Best of all, there is no clutter and no television in eyeline — just the forest, framed and uninterrupted.

Service & food

Baiersbronn takes its food very seriously, and the lodge holds its own: a regional tasting menu built on venison, forest mushrooms, trout from the valley streams and herbs from the garden, with a deep, Alsace-leaning cellar and a sommelier who pours generously. Breakfast is a long, slow affair of mountain cheeses, smoked ham, dark bread and an egg cooked to order while you watch the mist lift off the trees. Service is calm, knowledgeable and unhurried — Germanic in the best sense, attentive without ever hovering — and the spa team will book you a forest-floor massage that times out exactly as the sauna heats up. Half-board is the sensible way to stay; the kitchen is too good to leave.

The verdict

This is for walkers, sauna-lovers and serious eaters who want to switch off completely — not for anyone after nightlife or a buzzy crowd, of which there is gloriously none. It is a considered, design-led lodge with a kitchen that justifies the journey, and for what you get — the silence, the spa, that table — it represents genuine value at the upper end. Come for at least three nights, pack proper boots and a swimsuit for the cold plunge, and let the forest reset you.
